Banana Mug Cake

There is absolutely nothing to NOT LOVE about mugcakes! Especially on Monday because #MugCakeMonday! They're so quick and always there for when you run out of your usual eggs and toast for breakfast.

That's exactly what happened yesterday. Monday morning came real quick and our fridge was pretty much bare from the weekend. We usually eat pretty much the same thing for breakfast Monday through Friday. (Boring, I know..) Two eggs, Ezekiel toast, and the cafe latte. . 

Insert magic mugcakes! Seriously, if you haven't made one, you need to. Just give it a try! ;)



Banana Mugcake with ooey gooey banana filling
What you’ll need:
½ cup old fashioned oats
2/3 of a banana (mashed)
2 egg whites
½ tbsp coconut flour
1 tsp baking powder
2 tsp sweetener of choice
2 tbsp almond milk

Filling
1/3 banana (mashed)
½ tsp cinnamon

What you do:
Mix everything together (except filling ingredients) in a small bowl.
Spray mug with cooking spray and pour mixture into mug.
Mix together rest of banana and cinnamon for filling.
Pour on top of batter and push down, to middle of batter, with a spoon.
Microwave mugcake for 1.5 – 2 minutes.
Let sit for about 2 minutes.
Eat out of mug or tip upside down onto plate.
