I made this recipe 2 (TWO!!!) weeks ago and just now getting to post the recipe. I kept meaning to write it down, but time slips away from my butterfingers...mmmm butterfingers... :)
This recipe is pretty saucy. If you don't want it too saucy, don't add all the sauce into the baking dish. My dad asked if there was rice or something to put under it. I didn't even think to cook anything else, but since it's so saucy, I would recommend serving over rice or quinoa. If you're eating by itself (like me), half the sauce amount.
Sweet Potato, Chicken Sausage, and Kale Bake
What you’ll need:
1 tbsp EVOO
2 cloves garlic, minced
2 medium sweet potatoes, peeled and cubed
1 lb chicken sausage, sliced

2 cups kale, chopped
2 cups chicken broth
¾ cup almond milk¼ cup flour of choice
¾ shredded Gruyere cheese or white cheddar
What you do:

What you do:
Preheat oven to 350.
Heat EVOO and garlic in a large
saucepan over medium high heat.
Add sweet potatoes and cook for 3-5
minutes. Let sit a few minutes to brown.
Add chicken sausage and stir to
combine. Cook until both are browned.
Pour into a baking dish.
Pour into a baking dish.
Bring the broth and milk to a low
boil. Whisk in the flour and ¼ cup of cheese to form a slightly thicker sauce.
Keep whisking to until sauce is smooth.
Pour sauce over the sweet potatoes, sausage,
and kale in the baking dish.
Top with remaining ½ cup cheese.
Bake for 10 minutes until cheese is
melted and sauce is bubbling.
