Protein Tuna Patties

Protein Tuna Patties

What you need:
1 can Albacore Tuna (The ones I buy from Costco are 7oz)
½ cup cottage cheese (small curd)
1 whole egg
¼ cup Chopped onions
½ cup black beans
 Salt and pepper

What you do:
Mix all ingredients together in a bowl and form into small/flat patties. Heat up skillet, spray with cooking spray. Cook patties over medium heat until browned on one side & flip over to cook on other side.

This recipe made about 6 patties for me. I ate 2 patties with mustard and hot sauce on top of a kale & arugula mix. My 3 year old also ate 2 patties! (CHA CHING...kid approved!)

Chocolate Peanut Butter covered Banana Smoothie

I love smoothies and just throwing things in a blender. It’s kind of like the crock pot…it rarely comes out bad!
This was a post-workout smoothie I blended up the other day for me and the hunny. It turned out to be more like chocolate soft serve ice cream…no complaints! 
I like to call it the Chocolate Peanut Butter covered Banana

In a Blender:
¾ cup almond milk (coconut water or milk would work too!)
 1 frozen banana
1 scoop JP+ Complete Chocolate powder
1 tbsp chocolate PB2
½ cup ice

Blend it all up.
Garnished with a dollop of PB2 fluff (1 tbsp PB2 + ½ tbsp. Fage plain Greek yogurt)
Sprinkled with some unsweetened cocoa powder.

Garnishing isn't necessary but fun and makes everything more pretty! Enjoy the pretty smoothie!

REVIEW: EATS! American Grill

This is a fairly new restaurant in town (opened within the past month or 2). We decided to give it a try last Friday. It is a sports bar type restaurant with TVs and sport paraphernalia decorating the walls, and a bunch of beers on tap. 

I heard two things before we went:
"You Gotta have their Rib & Mac sandwich" and "It’s an overpriced burger place."

What we ate:
Key West Style Moscow Mules –this was a “sp
ecial” so I don’t know if they serve them all the time, but it wouldn't hurt to ask because THESE WERE GOOOOD! 

Fried Pickles – let’s be clear, if there’s fried pickles on the menu, you best believe I’m ordering them. It’s just the right thing to do. You can’t really go wrong with fried pickles so obvi these were fried goodness.

Rib & Mac Sandwich – Pulled pork topped with macaroni & cheese in between texas toast. This was OK. I didn't think it was spectacular or anything. It was actually a little dry.

The V Jack Burger - pulled pork sandwiched between two small burger patties, topped with cheese & bacon…On a hamburger bun.

The complaint box:
 I’m not one to make complaints…BUT what would a restaurant review be like without them?

I     - I think the pulled pork was sort of dry. I didn't eat the bread of the sandwich so I can only imagine the dryness if I did. The hubs told me to just douse it with ranch. He’d eat cardboard with ranch…

-The service was slow. I know this can be part of being a ne
w restaurant and still trying to iron out some kinks, but it was slow and took forever to get water cups filled.


Score Card
 On a scale from 1-5 stars (in the sports bar category), EATS! gets a 3.5

All in all, the food was OK, but absolutely nothing healthy about it. Sometimes you just have those kind of dinners…It’s good for the soul, right? They have this special sauce (kind of like ranch) that is real good and my husband dipped absolutely everything in.
This is a great place to go watch sports with a group of friends. 

Weekend Funsies (Sept 4th - 7th)

I really can’t believe it’s already Thursday! Crazy right!? It’s around this time when the question gets asked about weekend plans.  What are we doing this weekend? What day do we get to eat pizza? (Yes, that question is actually asked by my husband every week. We’ve recognized the problem but have no intention to fix it)

2.       The Tampa Boat Show is back this weekend at the Tampa Convention Center. $12.00 for adults

3.       Who doesn’t love markets?!
- The Shops at Wiregrass Fresh Market is filled with all kinds of goodies! Saturday starting at 10:00 a.m.


- The Fresh Market at Hyde Park Village is always a fun time with tons of vendors! It is held this Sunday (and every 1st Sunday of each month) from 10:00 a.m. to 3:00 p.m.

W.A.I.W.

Its already the middle of the week and I just now feel like I'm getting into the groove of the work week. My fridge has been looking sparse and it's time for a trip to Costco to load up on goodies (danger zone for the bank account). I usually do my grocery shopping on Sunday or Monday with a trip to Costco & Publix, but I've only made it to Publix thus far.

Moans & Motivations

It's not really Monday but it is kind of like Monday (but its Tuesday...) so let's just go ahead and do our Monday Moans & Motivations!

First, the moan...
We haven't been eating out as much in the past 2 months and this weekend we ate out twice! Both times ended with bubbly stomachs, gas, and trips to the bathroom (TMI?) I'm scared to eat at restaurants... 

Then the motivation: Because Stop complaining and YES! WE! CAN!

Labor Day 2014 Weekend Recap

It’s Tuesday and we’re back to the grind of normalcy today.  Sophia went to school & Nelpe and I are doing the work/nap/play thang (I work while she naps & plays). Hope everyone enjoyed their holiday weekend, whether you worked, partied, or relaxed at home. We did a little bit of everything!
