Hope everyone is having a wonderful morning. Nelpe.is.not. She cried the entire way to school...why? Nobody knows...just one of those days I guess. She's sleeping soundly right now, totally over her little episode of crazy. Hallelujah.
So, i think Wednesday is a really good day for tacos. Everyone's always like "yay taco Tuesday!" and I'm over here like "Yay i love tacos!!" Why the limitations?!
If you're looking to have some tacos, you should totally make these!!
Plantain tortillas
These are one of our favorites over here and have become a weekly staple in our menu. They’re pretty easy to make and so much better than any store-bought tortilla. We've ate them with ground turkey for a taco dinner or eggs & hot sauce for breakfast. Both did not dissappoint!

What you’ll need: (makes about 12 tortillas)
2-3 Large yellow plantains (make sure they are ripe!)
1/3 cup egg whites
3 tbsp melted coconut oil
1 tsp lime juice
½ tsp salt

What you do:
Heat oven to 350
Line a baking sheet with waxed paper and spray lightly with cooking spray.
Peel and break up plantain into pieces , place into blender or food processor and puree.
Once plantains are pureed, add the rest of the ingridents and puree till smooth.
Put about 2 tbsp of mixture at a time onto baking sheet (4 per baking sheet)
Smooth out with back of spoon, making thin circle tortilla shapes.
Bake for 15 minutes, when edges are starting to brown.
