Baked Buffalo Chicken Avocado Bacon Egg Rolls

Now that's a loooooong name, but had to get it all in there!
Since I bought the egg roll wrappers the other day, I wanted to actually use them so I was going back and forth between these and a more southwesterny wrap. Buffalo chicken seems to always win. I'll have to make the southwestern wraps too since I STILL have wrappers. Why do so many come in a package?!

What you’ll need:
2 chicken breasts
Buffalo sauce or any hot sauce of your liking
Cheddar cheese
Egg Roll Wraps
Cooking spray

What you do:
Preheat oven 425
Boil chicken until fully cooked.
While chicken is cooking, cook bacon.
Shred chicken and toss in buffalo sauce.
Working with 1 egg roll wrapper at a time, place the wrapper with one corner of the diamond closest to you.  Sprinkle a little bit of cheddar cheese in middle of egg roll wrap, layer shredded chicken, avocado, and bacon on top of cheese.
Roll the corner closest to you over the filling. Brush the 3 remaining corners with water with fingertips. Fold in the sides of the wrapper and continue rolling the egg roll up until it is closed. Press to seal, set on baking sheet, and continue with the remaining wrappers and filling.
Spray the top of each roll with cooking spray.
Bake for 7 minutes, flip over, and bake for 6 more minutes.
