Spicy Sriracha Chicken

If you're anything like me, you're ALWAYS looking for a new way to make chicken. I'm one of those who has a few favorite chicken recipes and plays ring-around-the-rosey with them. In efforts to not post the same old chicken recipes on here, I'm venturing out!

This sriracha chicken was spicy, but not "drinking a glass of water in between each bite" spicy. Paired with the salad and quinoa, it was that perfect amount of spiciness with great flavor!



Spicy Sriracha Chicken

What you’ll need:
2 boneless skinless chicken breasts
EVOO
2 tsp minced garlic
½ cup Sriracha
¼ cup honey
1 tbsp lime juice
chopped green onions
Cooked quinoa

What you do:
Cut chicken breasts into bite size pieces.
Mix sriracha, honey, and lime juice together.
Pour mixture over chicken and let marinate in fridge for at least 20 minutes.
Heat pan/skillet to medium-high and add in about a tbsp of EVOO and minced garlic.
Pour chicken and marinade into pan. Let chicken cook completely through, stirring frequently.
Once completely cooked, turn heat down to low and let simmer for about 5 minutes. This will allow sauce to thicken a bit.
Serve on top of quinoa and sprinkled with chopped green onions.
