Pumpkin Chocolate Chip MugCake

Happy Saturday!! 

With no soccer practice this morning, I wasn't planning on waking up too early. Nelpe had other plans and woke me up at 6:45 a.m. :-/ The hubs had some early morning errands to run (hair cut, home depot, etc), so he made some coffee and headed out the door. 

I've been doing house things this morning like laundry and cleaning out the girl's closets. Nelpe's 6-9 month clothing and Sophia's 2T clothing are no longer fitting them...sad, but good thing they are growing right?!

For breakfast I whipped up this quick 3 minute mug cake! Super yum and perfect for a quick no fuss FALL breakfast! 

Pumpkin Chocolate Chip MugCake

What you’ll need:
2 tbsp Coconut Flour
¼ tsp baking powder
¼ tsp cinnamon
¼ tsp Pumpkin pie spice
1 tbsp honey
¼ cup almond milk
1 egg white (3 tbsp)
3 tbsp pumpkin puree
1-2 tbsp chocolate chips

What you do:
In a bowl, combine all ingredients and mix well.
Spraying mug with cooking spray
Pour batter into mug.
Microwave for 2.5 - 3 minutes.
Let sit for 2 minutes
Tip over onto plate or enjoy with spoon out of mug!
