Healthy Coleslaw

I feel like coleslaw is one of those sides that never really gets eaten. It's the side dish I always pass up and never really order with a meal. It's always too mayonnaisey or vinegary for my liking. The only coleslaw I really enjoy is homemade, but that's pretty much with everything, right?!

So at the grocery store the other day, I don't know why but it sounded good. I haven't had it in awhile and wanted to make it sans mayo. 

This recipe was really good and simple! We topped the slaw with chicken and ate with roasted veggies. YUM! 
Also, perfect to bring as a side to a BBQ or potluck!


Healthy Coleslaw Recipe

What you’ll need: 
1 bag of coleslaw (16 oz)
¼ cup red wine vinegar
1 cup cottage cheese (small curd)
½ cup crushed pineapple
½ tsp cayenne pepper
Salt & Pepper to taste

What you do:
In a large bowl, mix together vinegar, cottage cheese, pineapple,  and cayenne pepper.
Pour in bag of coleslaw and mix until fully coated by dressing.
Chill in refrigerator for about an hour.
Season with salt and pepper to taste and serve.
